A simple, crowd pleasing cocktail, perfect for the holidays when clementines are in season and I seem to buy them in abundance!
75ml clementine juice
25ml rosemary infused simple syrup (see below)
4 dashes orange bitter
Champagne to serve
Place the clementine juice, simple syrup, vodka and bitters into a shaker filled with ice and shake vigourously. Strain this between 2 glasses and top with champagne, garnish with fresh rosemary and a strip of clementine peel.
