Fluffy Easter Bunny Cupcakes

Edd Kimber March 16, 2016

I remember that when I was a kid the height of sophistication at a birthday party was the butterfly cake, a fairy cake with its middle cut out and turned into miraculous butterfly wings, simple, cute and of course delicious. The little kid version of me didn't think there was anything wrong with simple and even after many a butterfly cake he definitely didnt get bored of those little cakes. These days however, that simple cake probably wouldn't meet most peoples standards, too easy, too plain, too boring. Thankfully you can still make a brilliant cupcake with minimal effort that looks so much better than the old school butterfly cake.

My friend Ruth, of The Pink Whisk fame, has come up with a brilliant recipe for Easter, in collaboration with Stork, a fluffy bunny cupcake. It takes no more effort than the old school butterfly cake but has way more visual appeal and a lot more going on in terms of flavour. I made a batch a few days ago and they were super quick to put together and using Stork With Butter means the cakes were light and fluffy and, as it can be used straight from the fridge, they took minutes to pull together. The decoration is in Ruth's characteristic simple and practical style, meaning it is easier to do than it looks. I think they would be the perfect thing for an easter weekend party and a brilliant thing to do with the kids over the half term holiday, why don't you make a batch and post a picture online using #storkbunny @bakewithstork

This weeks bonus recipe, for subscribers to my newsletter, is this gorgeous sour cherry and coconut gateau basque. The crust is a buttery cross between pastry and cake, think a cakey cookie. The filling is a layer of sour cherry topped with a rich coconut custard. A real fun one to make too! Link to my newsletter can be found in my bio - #gateaubasque #pastrycream #coconut #sourcherry

In this months @olivemagazine (out today) the team came and photographed my petit kitchen and we talked about how we put our stamp on the place, without spending a fortune. We hated the bland kitchen that we inherited but, as it was relatively new and in good condition, it felt a waste to rip it out and we also didn’t want to spend the money it would take to rip out the whole thing and replace it (it’s a howdens shell so we could have done something cheaper like @plykeakitchens @holte.studio @madebyhusk) so instead I painted all of the cabinets, using @makeitrustoleum kitchen cabinet paint, to give it some personality and lighten the whole thing. Are you making scones all wrong? Maybe, maybe not? But I do want to show you how I make them! This recipe is based on the method I learnt at @belmondlemanoir 12 years ago when I did a stage, and it makes the absolute lightest scones. And shock horror, it involves kneading the dough, albeit very lightly. You can get the full recipe in this weeks newsletter (free) linked in my bio. - #scones #bakingday #worldbakingday #afternoontea #hightea #englishscones #clottedcream #creamtea #theboywhobakes
